Kovakkai Varuval / Ivy Gourd fry /Tindora Fry


This Kovakkai / Ivy gourd is one of the  vegetable, which we neglect in a hesitation that we can't satisfy our family members to consume.

Ivy gourd is very good especially for people with diabetics. It has the ability to improve glucose tolerance and lower blood sugar level. It is good source of Vitamin and fibre. It helps in weight reduction and cholesterol control also.

This recipe is a very tasty one were the family members will ask for extra serving. So without any doubt you can buy this Ivy gourd and try this recipe. 

Ingredients

Kovakkai / tindora -1/4 kg cut it in round shape or length wise

Jeera - 1 tsp

Garlic - 5 pod, crushed

Onion - optional very little 

Curry leaves 

Turmeric powder-1/4 tsp

Red chilli powder-1/2 tsp

Coriander Powder - 1 1/2tsp

Jeera powder - 1/2 tsp

Amchur powder ( dry mango powder) - 1 tsp

Salt to taste

Oil - 2 Tbsp


Cooking method:

Heat oil in a kadai add jeera seeds, crushed Garlic pods & onion. 

Saute till the smell comes out and become little golden add the curry leaves and allow it to splutter.

Add the cut Ivy gourds and saute in the oil for 3 minutes. Add some salt also. Let the oil get coated.

Now add the masala powders one by one except the amchur powder. Don't add amchur now. Add the needed salt also. Give a nice mix.

Now add water to cover the vegetables like 3/4 cup. Cover it and allow the vegetables to get cooked.

After around 10 minutes open the lid and add Amchur powder. Check the seasoning.

Continue to saute in medium flame for 10 minutes. Dry roast till the water evoperate completely and becomes crispy.

Add coriander leaves and switch off the flame.
