Chettinad Rice Puttu Recipe | Arisi Puttu



This Puttu is one of the Chettinad authentic food prepares for breakfast or tiffin. When there is special guests like groom or in-laws family members, some respectable people, etc.



INGREDIENTS

Rice Puttu Flour - 1 cup

Water - 1/3 to 1/2 cup

Salt - 1/4 tsp

Paasi Paruppu (Yellow Moong Dal) – 1/3 cup (boiled)

Sugar – 1/3 cup 

Coconut Grated fresh – 1/3 cup

Cardamom powder – 1/4 tsp

Ghee – 1 tbsp

Cashews – 2tbsp

INSTRUCTIONS

Dry roast the moong dal to golden and then add water and cook it. Cook till the dal becomes soft but not mashy. The dal has be full and when you press it, it has to be soft & maskable. There must not be water. Keep it separate.

Take the rise flour in a wide vessel (basin style/ or kadai style). Add salt in the 1/2 cup of normal water and sprinkle little by little in the rice flour. Add water little by little and wet the rice flour thoroughly. The rice flour has to be moist but not wet or watery. The flour has to hold the shape you make and get crumbled to flour after release. ( Like damp beach sand). If any lumps are there sieve it and crumble the lumps fully.

Place this moist rice flour in a clean cotton clothe and place this in a steamer and steam cook it for 10 minutes. 

Heat a pan with ghee, add cashew nuts and roast till golden brown.Add grated coconut and stir over low flame till coconut is coated with ghee and till you get the smell. 

Add sugar and give a mix. Then the the steam cooked rice flour, cooked moong dal, cashew nuts and elaichi powder. Give a perfect mix and enjoy this delicious Puttu.

Carrot Cake Eggless

Carrot Cake Eggless




Gluten free Carrot cake made without eggs.

Ingredients

Carrots - 1 1/2 cups grated
Walnuts and Raisins - 1/4 cup

Wheat Flour - 1 1/2 + 2 Tbsp
Baking soda - 1 tsp
Baking powder - 1 tsp
Salt - 1/2 tsp
Cinnamon - 3/4 tsp
Nutmeg - 1/4 tsp
Dry Ginger Powder - 1/4 tsp

Brown sugar - 1 cups
Milk - 3/4 cup + little extra
Vanilla extract - 1/2 tsp
Coconut Oil (Virgin) - 1/2 cup

Preparation:


Prepare your cake pans by rubbing them with oil and then dusting a little flour on the oil. You can also line the bottom of your pan with parchment paper.

Grate the carrots into small pieces and keep them aside.

Add the dry ingredients flour, baking soda, baking powder, salt, and spices to a large bowl.

For the wet ingredients, in a smaller bowl, mix the brown sugar, milk, vanilla, and oil then stir with a whisk.

Add the wet ingredients to the dry ingredients and stir with a whisk.
Add the chopped carrots and beat with a whisk again for about 30 seconds until everything is incorporated. Don't over mix the batter. Add walnuts and raisins at this time.

Preheat the oven to 170°C.

Pour the batter into the prepared cake tin filling them about 3/4 of the way full to leave plenty of room for them to rise.
Cover the top with Alluminium foil.

Bake at 170°C) for about 45 minutes.
Remove the foil and cook for another 10 mnts.
Insert a toothpick and check whether it comes out clean.

Allow to cool on a rack for about 15 to 20 minutes before inverting to remove the cake from the pans.

Recipe Notes

Place the cake tin in the oven only after preheated to170°C.
The cake pans has to greased well before adding the batter. You can line the bottom of the pan with parchment as well.
The carrots chops has to be very small pieces.
Bake your cake until it dry on the top and check with a toothpick to comes out clean.
Allow your cakes to cool completely.

Note: This will make 9-inch Loaf tin or 24 cupcakes.

Chocolate Eggless Wheat Cookies



Eggless Wheat Chocolate Cookies

Recipe - Uma done and tested. Got 32 cookies.

Ingredients:

Wheat flour= 1 1/4 cups

Cocoa powder = 1/4 cup

Corn flour = 2 Tbsp

Powdered sugar = 1/2 cup + 1 Tbsp

Baking powder 1tsp

Butter= 100gms

Coffee Pwd =1 Tbsp

Cinnamon - 1 TSP

Salt - 1/2 tsp

Vanilla essence = 1tsp.

Milk room temperature - 2 to 3 Tbsp separately. 

Choco chips - 3 Tbsp for decoration

How to cook Eggless Wheat Chocolate Cookies

Preheat the oven 180 degrees. 

Line in parchment paper on baking sheet.

Sift wheat flour, Corn flour,Cocoa powder, Coffee powder, Cinnamon Powder, Salt and keep it aside.

In a bowl beat butter, sugar and vanilla essence till pale and fluffy.

Add the flour mixture to this butter sugar mixture and mix well. 

To this, add in the milk and bring everything together.

Once the cookie dough ready, let it rest in the refrigerator for 15-20 minutes.

Once rested, make small lemon sized balls and flatten very little. No cracks in the balls. Decorate with choco chips and place them on a baking sheet on your baking tray.

Meanwhile pre heat your oven to 170 degree Celsius.

Bake the cookies for 12-15 minutes. Once the cookies are out of the oven and let them cool completely.
